Another year has begun. 2020 was an extremely challenging year, and we all have high hopes for this new year. I would like to take this opportunity to wish everyone a healthy and balanced 2021.

In this first issue I would like to talk about “Veganuary” and explain the concept behind it. I’m also sharing a delicious and warming, winter vegan recipe for “Tomato and Basil Soup”, enjoy!


A Glance at Vegetarianism: Have you ever heard the term “Veganuary”? Veganuary is an annual challenge run by a UK nonprofit organization that promotes and educates about veganism by encouraging people to follow a vegan lifestyle for the month of January. Since the event began in 2014, participation has more than doubled each year. Veganuary can also refer to the event itself. Founded by Jane Land and Matthew Glover, the first event was held in January of 2014.


Participants sign up online and receive a downloadable "starter kit" and daily support emails. They are offered an online "vegan starter kit" with restaurant guides, product directories, and a recipe database. Participants are encouraged to share images and recipes to social media, which according to academic Alexa Weik von Mossner creates a sense of community and communicates the message that veganism is easy and fun.


People in the United States are now participants in the challenge. In 2019, The Washington Post reported that "46 percent of people signed up for health reasons, with 34 percent citing animal cruelty and only 12 percent climate issues".

Recipe: “Vegan Tomato and Basil Soup” (from www.thegreenloot.com)


Ingredients:

  • 1 tbsp olive oil

  • 1/2 head onion chopped

  • 2-3 small clove garlic

  • 25 oz pureed tomatoes

  • 12 oz water

  • 1 tsp basil dried

  • 1/2 cup fresh basil (chopped)

  • 1 tsp thyme dried

  • 2 tsp salt

  • 0.5 tsp black pepper ground

  • 3 cup tortellini pasta (cooked)


Directions:


1- Fry the chopped onions in 1 tbsp oil for a few minutes until they turn light brown.


2- Add all the ingredients to a small soup pot. Stir and cover.


3- Cook for 25-30 minutes. Taste while cooking.


4- Use a hand blender to make the soup extra smooth and creamy.


5- Add the tortellini pasta and top with a generous amount of chopped fresh basil.
