It’s January! The beginning of a new year AND also a new decade. It’s the perfect time to make positive changes and feel inspired to work hard to become our best selves.


We all made our new year resolutions and set the goals we want to achieve. We should make use of all the energy flowing around us to start this new decade making strong and positive impacts.


I always wanted to become an activist and actually do something to help causes that matter to me, but with busy schedules and so many obligations sometimes it seems like nothing but a wish we all have but can’t really make it come true, but what if I told you it is possible to become an activist, to make a difference, to make positive impacts by dedicating only a few minutes of your day to causes that matter to you from the comfort of your home?

In this issue I’m going to show how you can change the world using your smartphone!


A Glance at Vegetarianism: Thanks to technology now it is possible to become an activist and help the world become a better place from the comfort of your home (or anywhere really!).


There are animals suffering, being tortured and tested in labs as you read this column. What if I told you, you can actually help stop all this nonsense suffering?


I’m talking about online petitions. You can download apps from organizations that will offer you a variety of causes, you can choose which causes matter to you and use your smart phone to sign and share such petitions. That means you can change the world by dedicating only a few minutes of your day to signing online petitions from anywhere you'd like!


Below you can find the names of a few organizations. All you have to do is to download the respective apps or access their websites and start signing the petitions they’re promoting.


You can help end animal cruelty, you can help the environment, and even people suffering around the world. A click is all it takes! Start the new decade being an activist and making this world a better place! We’re counting on you. Help us put an end to animal cruelty. Become an online activist!

Recipe: “Vegetarian Chicken Stroganoff” – This delicious mid-19th-century Russian dish happens to be my all-time favorite dish!


The vegetarian version looks and tastes just like the original recipe which is made with actual animal protein. Stroganoff is originally made with sautéed pieces of beef; the dish has become very popular around the world with considerable variation from the original recipe (variations include chicken and sausage stroganoff, served either with rice or noodles). My favorite variation of this epic dish is the most popular one: chicken stroganoff (vegan/meatless/plant-based chicken in my case) served with white rice. In this issue I’m sharing a very easy and delicious vegetarian version with a Brazilian touch (in Brazil the dish is served either with French Fries or Shoestring Fries in addition to the white rice, salve salve!).


The only vegetarian product you’ll need for this recipe is a substitute for chicken, I recommend you use Quorn’s Chicken Tenders, you can find it at any Publix store as well as Whole Foods stores, it costs around $ 5.00.


Ingredients:

- Quorn Meatless Chicken Tenders

- 1 onion

- 1 can of table cream (7.6 FL OZ / 225 ML)

- 2 tablespoons of ketchup

- 1 tablespoon of mustard

- 1 handful of champignons a.k.a. “white button mushrooms” (sliced or whole, I prefer using whole mushrooms for this recipe)

- Two pinches of Himalayan Pink Salt

Directions:

Chop the onion, put it in a sauté pan with a little bit of extra-virgin olive oil and fry it for only a few minutes (just to soften the onion). Add the mushrooms and the meatless chicken tenders and stir-fry them together with the onions just for a few minutes as well. Add the table cream, the ketchup, the mustard and the salt and let it simmer for around 15 minutes. Et voilà! Serve it with rice (most people serve it with white rice, but I prefer brown rice) and add french-fries or shoestring-fries to give your Stroganoff a Brazilian touch! Easy peasy and delicious! Enjoy! Or should I say Наслаждаться?
