April has arrived. A very sweet and “chocolatey” month! We celebrate Easter (hence the “chocolatey” adjective) and Spring blesses us with life, beauty and colors.


Holidays are always great, we gather with family and friends and celebrate, we eat A LOT of delicious food (some of us drink a lot as well) but one thing we all have in common is the “holiday weight”, which is basically “the price” we pay for indulging ourselves. In this issue I’m going to talk about the weight loss benefits liked to the vegan diet. I already (briefly) talked about the weight loss benefits linked to vegetarian diets in a previous issue of Reflections, so this time it is the vegan diet’s turn. Considering April is the month we celebrate Easter, I’m sharing a delicious and cruelty free traditional "Easter Ham Roast" recipe. Enjoy!


A Glance at Vegetarianism: Did you know a 2016 study from Harvard University found vegetarian dieters lost more weight than non-vegetarians after 18 weeks? Vegan dieters actually saw the most weight loss, losing five pounds more than non-vegetarians, while vegetarians lost three pounds more. Another 2009 study from Loma Linda University found that vegans on average, had healthier BMIs than both lacto-ovo vegetarians—who eat eggs and dairy—and non-vegetarians.


Vegans and vegetarians consume a significantly higher amount of whole grains, and vegetables, because of the plant based products they consume to substitute meat and other animal protein products.


This “green consumption” leads to a lower body fat index, and offers lean protein, healthy fats and complex carbs (the good kind which your body uses as a source of energy, instead of just storing it as fat) unlike most animal protein products.


How great is that? You get to eat cruelty-free, delicious products AND it gets easier for you to lose weight!

Recipe – “Vegan Easter Ham Roast”


For this recipe you only need one specific vegan product, the Celebration Vegan Roast” from Field Roast. For the Maple Glaze you’re going to use regular ingredients you probably already have in your home.



Ingredients:


· Field Roast Celebration Vegan Roast

· Vegetable Broth


Smokey Sweet Maple Glaze


· 4 tbsp maple syrup

· 4 tbsp soy sauce

· 2 tbsp tomato paste

· 6 drops liquid smoke

· 1 tsp smoked paprika

· 1/4-1/3 cup apricot jam depending on how sweet you like it

Directions


Glaze: Mix all the ingredients and set aside, it will be strongly flavored so play with the balance of flavors to your own taste.


Field Roast Stuffed Celebration Roast is fully cooked and ready to eat. Thaw and remove packaging before use. Oven (As a centerpiece): Preheat oven to 325°F. Place roast in pan, baste with vegetable broth or olive oil and herbs of your preference, and reheat until warmed through (30-40 min).


Once the Roast is fully heated, bake it for another 15 minutes at 375 Fahrenheit brushing with glaze as often as possible until fully heated. If you desire a brown exterior, then place it under the broiler on high for 4-5 minutes. Serve with any extra glaze you have left and enjoy!
